Why the Pan You Choose Is Already a Heat Decision
Most home cooks obsess over seasoning, ingredients, timing. Almost nobody talks about this: the shape of your cookware is already making heat decisions before you even turn on the burner.

But if your Korean cooking leans toward braised dishes, soups, stews, or thick pancakes that need time to cook through without scorching? The flat pan is doing work the wok simply cannot replicate without constant babysitting.
