Here’s the thing: temperature isn’t just a detail for kimchi storage — it’s basically the whole game. At 0–4°C (a dedicated kimchi fridge or your coldest fridge shelf), fermentation slows by roughly 60%. That means your kimchi stays in that perfect tangy-but-not-overwhelming stage dramatically longer than it would at typical fridge temps of 7–10°C.
