💡 A complete how-to for making Korean fermented foods at home: once you understand the basics of salt ratios and temperature control, even beginners can safely produce kimchi, doenjang, or ganjang from scratch.
Why Most Home Fermentation Guides Set You Up to Fail
I’ll be honest: the first time I tried making kimchi at home, I oversalted the cabbage and the result was technically edible but not something I’d have served anyone. Not even close.
The how-to guides I found online were either too vague (“salt to taste,” which means nothing) or calibrated for restaurant kitchens making 20 pounds of cabbage. Neither is useful for someone who wants to start small and actually succeed.
It took a few attempts — and some honest conversations with people who grew up making this stuff — to understand where I was going wrong. The good news: the mistakes are predictable and completely avoidable once you know what actually matters.
Korean fermented foods fall into three main categories you can realistically make at home: kimchi (fermented vegetables), doenjang (fermented soybean paste), and ganjang (fermented soy sauce). Very different timelines. Very different skill levels. Start with kimchi — that’s the correct answer for almost everyone.
Making Kimchi: The Right Way to Start
💡 Kimchi ferments in days, not months — it’s the lowest-risk entry point into Korean fermentation and the skill that makes everything else feel possible.
Here’s the process, without the fluff:
- Salt the cabbage. Cut napa cabbage into quarters, then work sea salt between every layer. Use approximately 2% salt by weight — that’s 20 grams per kilogram of cabbage. Let it sit 1–2 hours until wilted, then rinse thoroughly and squeeze dry. This step is where most beginners over-salt, so weigh your salt rather than eyeballing it.
- Make the paste. Blend gochugaru (Korean chili flakes), minced garlic, fresh ginger, and fish sauce together. For a plant-based version, soy sauce works. The paste should be thick and deeply fragrant — if it looks watery, it needs more gochugaru.
- Coat and pack. Wearing gloves (the chili stains everything permanently), coat every piece of cabbage with the paste. Pack tightly into a glass jar, pressing down firmly to eliminate air pockets and push out oxygen.
- Ferment. Leave the sealed jar at room temperature — ideally 18–22°C (65–72°F) — for one to two days. You’ll see bubbles. That’s the bacteria working. Transfer to the fridge after that. It’s good immediately, but develops significant complexity over the following one to two weeks.
Tip: Fresh kimchi smells like spiced, slightly funky cabbage — that’s correct. If it develops pink or black mold, or smells genuinely rotten rather than sour, discard it and start over. Proper 2% salting prevents almost all issues; most failed batches trace back to under-salting.
A friend of mine — someone who had never cooked Korean food before — made her first batch last winter. By day two, she was texting me convinced she’d done something wrong because of the smell. By day four, she was eating it straight from the jar. She’s made three batches since. The learning curve is steeper in anticipation than in practice.
Doenjang and Ganjang: For When You’re Ready to Commit
These two are made together from the same starting point — soybeans — and they require patience measured in months, not days.
Soak dried soybeans overnight, then boil until fully soft (three to four hours). Mash into a thick, dense paste and shape into blocks called meju. Allow the meju to air-dry and develop surface mold in a warm, well-ventilated space for four to six weeks. The mold — typically Aspergillus and Bacillus strains — is essential. This is not a sign that something went wrong.
Next, submerge the meju in salted brine (18–20% salinity) inside a clay or ceramic jar. After 60–90 days, separate the liquid from the solids. The liquid becomes ganjang. The solids become doenjang. Both continue to deepen in flavor the longer they age — ganjang in particular can develop remarkable complexity over one to three years.

The Two Variables That Actually Determine Success or Failure
Temperature and salt. Everything else is secondary.
Here’s the thing most fermentation guides bury in footnotes: fermentation is forgiving, but only within a range. Too warm — above 25°C or 77°F — and fermentation accelerates beyond control, producing over-sour kimchi or unstable bacterial activity. Too cold and beneficial bacteria barely activate at all.
For kimchi: 18–22°C during initial fermentation, then fridge temperature (around 4°C) for long-term development. The cold doesn’t stop fermentation — it slows it dramatically, which is exactly what you want for building depth over weeks.
For doenjang and ganjang: consistency matters more than hitting a specific number. A cool basement or cellar that stays below 20°C is ideal. Wild temperature swings are the real enemy.
Salt is your safety mechanism, not just a flavoring agent. At 2% salinity in kimchi and 18–20% in fermentation brine, harmful bacteria cannot survive the environment — while the beneficial lactic acid bacteria thrive in it. Reducing salt to cut sodium defeats the entire purpose. You’re not seasoning food here. You’re engineering a selective microbial environment.
Tip: Buy a kitchen scale before you start. Salt percentages measured by weight are dramatically more reliable than volume measurements — a half-teaspoon of fine sea salt and a half-teaspoon of coarse sea salt contain very different amounts of actual sodium. A 1% salinity difference can swing a batch from excellent to failed.
If you commit to one project from this guide, make it kimchi. Fastest payoff, lowest risk, and — once it works the first time — the clearest possible demonstration that fermentation isn’t complicated. It’s just chemistry you can eat.
